Dice Brownies

I made these for a game party at our house on Saturday.  I had been toying around with the idea for a month or so now, and was thinking about doing it for Tysen’s birthday, but when buying ice cream cupcakes from Maggie Moo’s didn’t work out, I decided to modify my dice idea and use a box of brownie mix and tub of vanilla icing that I had previously purchased.  To construct these dice brownies, I baked the brownie mix in a 13×9 pan.  Once cooled, the brownies were about 1″ tall, so I placed toothpicks at every 2″ to make 2″ square brownines.  Then, I stacked two brownies together, with a layer of icing in between.  The stacked brownies were then covered with icing and store-bought green and black icing gel was used to create the pips.  Another option for the pips is to use chocolate chips, with the pointed end inserted into the icing.  I’d probably use those next time so my pips wouldn’t sag.  I also might try out using fondant icing next time to get a smooth dice.  They were fun to make and definitely yummy to eat!
