Little ones love Brobee

I recently acquired an external flash for Amelia’s camera and the difference in the pictures is profound. A thanks is in order to Sara and Cheryl for their awesome Graduation present. So far I’ve really only used it on the animals. We discovered that Masen also likes to play with the vibrating Brobee toy just like Arcadia (as well as myself). Also we captured Masen preforming one of his tricks on camera.  We also got some good pictures of Cookie.

I’d been wanting to get some photos of Arcadia in the tub since she really enjoys bath time.  So, this weekend we brought the camera upstairs and gave her a bath and took lots of photos to commemorate the event.  Enjoy!

Coffee Cake Recipe

Since my parents were coming to visit, I wanted to have some yummy food on hand for their stay.  I came across a recipe for a blueberry coffee cake on Whole Foods’ website a while back and thought it would be perfect and much healthier than traditional coffee cake.

Yogurt was used instead of any oil and only whole wheat flour was used and the slivered almonds gave the cake a nice crunch.   This cake also got me to buy cardamom.  I’d seen it in other recipes, but it’s not an easy spice to get and it was a bit pricey.  But, it did add a nice flavor and I can’t wait to use it more in recipes where I had previously omitted it.  We had the cake for about a week, but I’d recommend eating this within a day or two of making it.  The recipe for the cake can be found here.  Enjoy!

**Oops!  This should have been posted before the Amish Friendship Bread…I forgot it was still in draft form.

Amish Friendship Bread

Recently I came across a recipe for pecan peach amish friendship bread on one of blogs in my feed reader.  We’ve had cans of peaches in our pantry for a couple of months now becuase Tysen asked me to buy them, but after I brought them home, he swore he never asked for them.  When I came across this recipe, I thought it would be a good use of one of the cans.  The only problem was that I didn’t have the Amish friendship bread starter, so I decided to make it myself using the recipe at Allrecipes.com.  Last week I started the starter, and planned for day 10 to be today since I had the day off and would have some time to bake.  Not knowing who to give the starter to and not wanting to burden anyone, I decided to make a bunch of bread that I could then freeze.  I ended up making 3 types of bread (each type making enough for 2 5″x9″ loaves) and freezing  some starter so that a fourth kind of bread could be make in the future.

1) Pecan Peach Bread (made according to recipe linked above, except I used 1 cup of whole wheat flour and 1 cup all-purpose flour for the 2 cups of flour)

2)  Banana Walnut Chocolate Bread (I used the basic recipe, then again swapped 1 cup of whole wheat flour for 1 cup of all-purpose flour, and used banana cream instant pudding, and added 1 chopped banana, 1/2 cup chopped walnuts, and 1/2 cup mini semi-sweet chocolate chips)

3) Lemon Poppy seed with glaze (I used the basic recipe, the zest of one lemon in place of the vanilla extract, 1/4 cup of black sesame seeds (didn’t have poppy seeds) in place of the cinnamon and nuts, and lemon instant pudding).  For the glaze, I used 1 cup of confectioner’s sugar mixed with 2 tablespoons of lemon juice (squeeze from the lemon used for zest).

Once all the breads were baked and cooled, we had a taste test. For the first bread, I wish I had saved the juice from the canned peaches and made a glaze.  I thought the bread could have been a bit sweeter, or maybe contained additional spices.  The moistness of the bread was good, though, and it was nice to get bites of chopped peach.  The second bread was good, but got a little burned on the bottom.  On the whole, the first two breads were much denser than the third because I used whole wheat flour.  The third bread was both of our favorites.  Both the glaze and bread were bursting with lemon flavor.  I’d been wanting to make a lemon poundcake or lemon squares for a while now, and this cake satisfied my desire for lemon dessert.

The Uncle’s Graduated!

May is a month of graduations for our family.  Both Arcadia’s Uncle Riley and Uncle AJ graduated this year after 4 years in college.  Uncle Riley from Georgia Tech (Go Yellow Jackets!) and Uncle AJ from University of Maryland (Go Terps, I guess, except when you are playing the Yellow Jackets!).  Arcadia had the chance to go to both of these graduations.  Riley graduated on May 2nd, so we took a road trip to Atlanta to see that.  AJ graduated on May 22nd, so my parents came up to visit us and we went over to College Park together.  It was great to hang out with family both weekends.

Uncle Riley graduates! Have fun on your road trip.

Uncle AJ graduates! Good luck with your job!

Hopefully no one is upset that I’m reporting the graduation news here or posting the photos.  Someone’s got to keep our audience updated! :)

My First Post…

Well now, what should I write about…

After my graduation I really haven’t done much to talk about, just running errands and a little of this and that. Mostly I have been preparing for my awesome trip I’m planning to take. And here is a lovely picture of all the stops of the trip. The order and locations of the trip are tentative and could change depending on time or whatever might come up.

The only other interesting thing that has happened to me recently has been the completion of very complicated puzzle, being that the image was very fuzzy and all the gray scale pieces looked exactly alike, and it was not destroyed by the cats like Tysen and Kathryn’s puzzle. It turned out quite nice.

Lastly I wanted to mention that the rest of my time has been spent with Amelia’s cat Masen. He’s a fun cat if you don’t know him. Amelia and I have been working with him trying to teach him tricks. We’ve only been working with him for a short period of time so he only knows how to jump up on his back legs, he paws for things that he wants (for the water faucet to be turned on), and we are working on making him speak. Here are some pictures of him.
