RKDy Video Update

CSA, Week 6

First, an update on food made with last weeks veggies:  We had a salad, potato gnocci, apple coleslaw, and zucchini orzo “risotto” with feta.  All were very yummy, although I’ll have to perfect my technique for cooking potatoes.  Some of our pasta had hard lumps of potato in them.  Also, RKDy got some pear puree and mashed potato from the share.  Last week I also made cookies & cream cheesecakes.  While these didn’t use CSA veggies, they were yummy so I thought I’d share the recipe.  I only made half the recipe as we were just having a few people over for an impromptu game party.

On to week 6: The fruit share started this week!  We got peaches and Lodi apples.  And finally, I included the eggs in the photo below.  There’s no set plan for any of these foods yet, except to make cucumber sandwiches.  And, we’ll have to cook up some eggs since we still have our 1/2 dozen from last week.

Blueberry Lime Jam

Blueberry season is upon us in VA.  The grocery store where I shop was overflowing with blueberries last Tuesday when I made it there, so I bought 2 quarts to make some jam from the Homemade Preserves book I got back in May.  I was a little hesitant to make the jam given what happened the last time I made jam, but was eager to get it right.  My recipe called for 12 cups of blueberries, so I had to do some math to make it work for 8 cups, which got a little tricky when determining the amount of sugar and pectin to add, but I think it worked out well.  We have success.  We ended up with 3 jars of jam, one of which went into the fridge for immediate consumption.  I just had my first piece of toast with jam, and its delicious.  I think I’m confident I can make jam again, and will definitely do this again!

CSA, Week 5

Here’s this week’s veggies.

We’ve had the pepper and oregano plants for a while now, but I thought I’d include them in the photo since I didn’t include them when we got them.  Our pepper plant is even sprouting little tiny peppers.  We’ll see if they really amount to much.  In the background is the bag we got for bringing home our veggies each week.  As always, we also got a 1/2 dozen farm fresh eggs, which aren’t pictured.  Starting as early as next week, but it could be the following, we should be getting our fruit share.

Robin, of Matt and Robin, got a chance to carry RKDy while at Great Falls.  RKDy was not happy to be leaving mommy.  In the vocal manner of Comic Book Guy, “Best Frown Ever.”

Our Final Day of Vacation

Was spent touring Boston.  In the morning we went to the ICA, which has free admission for families on the last Friday of each month.  The top floor of the museum was the gallery floor, which didn’t allow photos.  On the first floor, there was the wall of colored windows and activities for the kids.  We made some buttons at one of the stations.

Also while in Boston, we met up with Charlotte and her husband Brian for lunch and a walk through the sites.  We walked from Qunicy Market, where we had lunch, through the Boston Common and to the Public Gardens.  Here are photos from the day.

The next morning involved a drive back out to Cape Cod to attend a wedding breakfast for Luke & Karen.  While there, we met up with some other Delta Sigs from GT and got to spend some time catching up.  After meeting for breakfast, we started the long drive home, arriving back home close to midnight.

Cape Cod

Ok, so finally getting around to posting the last of our vacation photos…Here’s some pics from our walk along the trail to the beach at Race Point.  Brace yourself, as there are a lot of RKDy photos. :)

Upon return from Provincetown, Cape Cod, we met up with John & Marilyn Corn for dinner at Punjab Cafe in Quincy, MA.  Very yummy food, and we had a good time catching up with friends.
